Fantastic! The working week is nearly over and blimey, hasn’t this week seemed ever lasting. Too tired to do much more than stuff my face and slump in front of the TV tonight. I am currently watching the inspirational and slightly eccentric Hugh Fernley-Whittingstall (known in our house as Hugh Furry-Knitting-Wool) who, on screen, is growing and cooking his way through Spring. Feeling sooooo envious. He has just said that he aspires to “follow the pace of nature”. Oh, so do I, Hugh. But, it is far easier to do that when you have a small holding and a telly presenter salary. Much more difficult when you have to fit cooking, growing and wafting languorously around farmers market stalls around braving public transport in the sleet, before doing a nine hour day in an office then going home to do the ironing. Although, I guess Hugh has to skip out and support his herds of cows, pigs, sheep and chickens every day and I just have to feed two cats. Would really like to own a goat though…

Not sure what we are doing this weekend yet. Might be going for lunch in York, so haven’t really planned my weekend menus. The weather forecast is looking good so might get some time in the garden. At this time of year, there is nothing nicer than getting half an hour sitting in the garden (even if it means wearing a coat, two jumpers, a hat and four scarves) with the newspapers, a cuppa and a wedge of cake.

Ade had a big work lunch today, so wasn’t very hungry. I was starving and needed to eat NOW! I have a fail safe Slimming World recipe (no, stay with me on this one…) for crust less quiche. Beat up three eggs, some seasoning and half a pot of cottage cheese. Pour this into an oven proof dish and add some cherry tomatoes (or anything that you would normally stick in a quiche) and bake in a hot oven for about 15 minutes. Serve with coleslaw and a bit of salad to prevent the onset of scurvy. Filling, fat free, comfort food – it’s more like a fool proof omelette than a quiche really. The other good thing is that there is very little washing up.
