In order to take my mind off food after dinner tonight, I decided to do some cooking…
Still on the leftover kick, I made some mashed potatoes and have mixed it with the leftover leek, fennel, cabbage and mustard from yesterday with a bit of additional seasoning, so can make some bubble n squeak cakes tomorrow night. Will make patties and bake rather than fry them. Proper comfort food – crispy on the outside, soft on the in. If I was feeling indulgent I might stuff them with a bit of cheese for an oozy surprise.
Will serve them up with sausages. Meaty, herby ones from our lovely local butcher, fried very, very slowly (without pricking) over a tiny heat for about an hour for Ade. I will bake some Quorn bangers for me. The other option for me is a low fat sausage; at least a Quorn sausage tastes of something even if it doesn’t taste of sausage.
Anyway, it’ll taste pretty damn good with a splodge of brown sauce – although I’m not sure Nigella would have any truck with either a Quorn banger or brown sauce.
It’s certainly something to look forward to during another long day at my desk. Warm, filling, comforting, cheap and uses up more of the wretched leftovers. I think I’m getting the hang of this credit crunch thing now.
