Despite my jeans feeling a bit on the snug side this morning, I have just had a lovely bacon sarnie made with Spoilt Pig bacon and Jamie Oliver’s homemade tomato ketchup (I really wasn’t convinced that it would be worth making ketchup, after all could anything compete with the perfection that is Heinz. Believe me, it’s worth it. I think it’s something to do with the undertone of fennel. It’s clever). Also, I am making a trifle for tonight. I love that the Italians call trife "Zuppa Inglese" - English Soup. Decided that I wanted to make some individual trifles rather then the usual Millennium Dome sized thing and wanted something subtle and warming rather than exuberant and festive, as I am celebrating winter comfort rather than bloody over-the-top New bloody Year.
So, I have done a base of ginger cake and sprinkled it generously with Stones Ginger Wine. Once that has settled I am going to add a couple of teaspoons of lemon curd and the seeds from a passion fruit. I thought about adding a sugar-free lemon jelly but knew that Nigel Slater would think it was beyond common, so will just top with custard, whipped cream, another dribble of fruit pulp and a bit of candied lemon peel if I can find some.
Its trifle, but not as we know it.
